Vegan Caesar Salad Dressing
mmmm…. mmmm, this is one of my favorites. Who doesn’t look a classically dressed romaine salad. This Vegan Caesar dressing will knock your socks off! Just writing about makes me in the mood.
This salad is a perfect dish all on its own all year around. You can add a little frill to it by adding coconut bacon to you.
I also love this salad paired with my favorite GF pizza or it goes great with the flavor filled dish farinata.
Romaine is an amazing lettuce. I invite you to get to know this lettuce if you don’t already, and I am not talking about the three pack that comes in a bag at Whole Foods. Go to your local farmer’s market and pick out some of this crisp summer lettuce. It comes in a bright green, dark green, and red. You can get mature ones and you can get “gems” little romaines. Romaine is crisp, watery, sweet, and is not just your average salad green. I dare you to juice it, grill it, or well, just make a salad out of it.
- 1 C raw cashews, soaked for 1-6 hours
- ¼ C nutritional yeast
- The juice of 2 lemons, approx. 4 T
- 2 T apple cider vinegar
- 1-2 garlic cloves (or try garlic scapes when in season)
- 2 tpsn dijon mustard
- 2 T capers
- 1 tspn sea salt, or to taste
- Freshly ground black pepper, to taste
- 1 C water
- 1 C sunflower or olive oil
- 2 heads of romaine.
- Soak the cashews ahead of time. If you are short on time soak them in warm water for an hour to soften them.
- Add all ingredients except the oil to a high powered blender.
- Blend, starting on low and increasing the speed up to high, when you a have a good blend going, slowly add the oil through the top of the blender for good emulsification.
- Taste and adjust.
- Decant into a jar.
- Cut, wash, and dry romaine
- Start with a ½ C of dressing and add it to your freshly washed romaine.
- Serve on a plate and top dress with freshly ground black pepper.
- Enjoy.
Tips
You can top dress this salad with pine nuts, Kalamata olives, coconut bacon, friend capers, chickpea croutons, or even roasted grapes.

This dressing does well on a kale salad.
This dressing will never let you down as a dip.
